Getting my Pinterest on!

Morning!

What a weekend.  I had a cold all last week. Still got a little cough. Now I'm up working. Needing to clean up....

So I did some cooking from recipes I found on Pinterest. I've been searching for healthy recipes to make since Alex is training for a fight.

The first one I did was a lemon garlic chicken.  I forgot the potatoes. I remembered when I was already almost home. I wasn't going back since I'd been going all over town all day.

Just a side note: I absolutely hate that these stores have like three registers open on one side of the store, and it's usually on the opposite end of the store that I came in on, causing me to have to hike all over the place. But at least I got in some form of exercise....right?

Anyway back to the chicken...Alex still liked it, even though there were no potatoes. Here's a pic:

The second recipe I tried this weekend was buffalo chicken rolls.
I changed it up from the original recipe. Instead of bleu cheese, I added mozzarella and instead of the slaw, I used celery. I also used tofu in a couple. Everyone seemed to like the tofu ones too. It's going to take me some getting use to for the tofu. But I'm not the most healthy eating girl, so baby steps....but here are mine:
